Bruschetta on Toasted Ciabatta - courtesy of Brumby's
 
Ingredients
Brumby's Ciabatta (sliced and toasted)
6 very ripe tomatoes diced
10 basil leaves torn
1 small red onion very finely diced
1/2 cup of dressing
salt and freshly ground pepper
Dressing - mix together:
2 tsp dijon mustard
2 tbsp red wine vinegar
1/3 cup olive oil
Method
Mix the tomatoes, basil and dressing, stir through the onions and spread in spoonfuls over the toasted Brumby's Ciabatta. Serve immediately, sprinkled with salt and pepper.
