COMFORT FOOD CRAVINGS CRUSHER | MISO MUSHROOM PASTA

INGREDIENTS

  • 320g Rigatoni
  • 600g Mushrooms, sliced
  • 3 tbs butter
  • 3 cloves garlic, minced
  • 1.5 tbs soy sauce
  • 1tbs miso paste
  • ½ tsp black pepper
  • 375mL cream
  • 1 cup grated parmesan
  • Chopped fresh parsley, to serve

Serve with a thick slide Rustic Sourdough with lashings of butter from Brumby’s Bakery.

METHOD

  1. Prepare your pasta based on instructions and cook till al dente, reserving half a cup of pasta water.
  2. Meanwhile in a pan, add mushrooms and pan-fry on medium heat for 2-3 minutes without any oil. The mushrooms should get softer, and this will help bring out the aroma of the mushrooms.
  3. Add butter and garlic and saute until fragrant – 1-2 minutes. Add soy sauce and stir through. Pour in cream, then add miso paste, stirring well to dissolve. Season with black pepper.
  4. Simmer sauce for a few minutes until it begins to thicken. Add in your pasta, and sprinkle grated parmesan over the top. Pour in reserved pasta water and stir everything together. Cheese should melt through and the sauce should thicken further.
  5. Divide into four bowls and top with fresh parsley to serve.
