Mother’s Day Caramilk Banana Bread

Banana bread – a timeless treat that’s been passed down from mum to mum, kitchen to kitchen. Familiar, comforting, and always made with love.

But this isn’t your average banana bread. This version is soft, golden, and scattered with creamy Caramilk chocolate that melts into gooey, caramelised pockets of joy.

INGREDIENTS
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 2 eggs at room temperature
- 1/4 cup greek yoghurt
- 1/2 cup mashed banana (aproximately 2 medium to large sized bananas)
- 1 teaspoon vanilla extract
- 1.5 cups all purpose flour
- 1 teaspoon ground cinnamon
- Pinch of salt
- 180g Caramilk choc-chips

METHOD
- Preheat oven to 180ºC. Line a bread loaf tin with baking paper.
- In a large mixing bowl, combine oil, brown sugar, eggs, yoghurt, mashed banana and vanilla and whisk.
- In a smaller bowl, whisk together flour, baking soda, cinnamon and salt. Pour the dry ingredients into wet and stir gently until just combined. Fold in caramilk chips.
- Pour batter into prepared pan and bake for 45 minutes, or until the top is golden and a skewer comes out clean. Allow to cool in pan for 10-15 minutes, before removing and placing on to a cooling rack. Slice when cooled completely.
PRO TIP
🍌 If your bananas need ripening, place them in a paper bag for a day or two until soft and easy to mash.
